We can only touch on just some of the benefits of the project here. The key changes included the rollout of colour coding of all allergens by risk, the installing of a new bespoke transfer barrier and allergen grids. A new weighing and IT system was also installed that flags up to operators that they are about to weigh an allergenic ingredient and to put on the correct personal protective equipment which is then disposed of after use to ensure cross contamination is avoided.

All of this innovative technology would be worth next to nothing without the rigorous training programme that our dispensary staff have received which really had driven home the importance of controlling allergens, particularly when providing food for the elderly and vulnerable as apetito does.
