Development Technologist, Cheryl Brown, talks about her role in team apetito.
As “Development Technologist”, what would an average working day consist of?
Frequently, new and improve recipes are being tested in the kitchen and after checking the production process is okay, I’ll liaise with our chef to check the meals meet his high standard.
I’m also involved in deciding on diet coding. Obviously, were trying to keep salt low so we’ll try herbs and various seasoning to get the same taste.
We’ll then prepare it for trial and approval by writing out the recipes and cooking methods and liaise with other departments to ensure their time scales are appropriate for the launch date.
There’s a lot that does on behind the scenes. Often people will think that once we’ve got the recipe, that’s the end of it but there’s so much more than that.
And what’s the most challenging part?
Trying to achieve the diet coding that is required, to come up with a product that’s still excellent quality and tastes great.
Tell us about the Wiltshire Farm Foods Winter Range?
We’ve kept all the good old traditional favourites like Turkey with all the Christmas trimmings. Last year, we introduced Roast Pork with Cranberry and Nut Stuffing and it was so popular its back on the menu this year!
New for Christmas 2007 is Roast Beef in Bordelaise – slices of beef in rich, red wine gravy with shallots. Then there’s tender, slow cooked Lamb Shank with caramelised red onions and Redcurrant Sauce plus sumptuous side orders of fluffy Mashed Potato and Cauliflower and Broccoli Cheese.
For veggies there’s a heart-warming Vegetables Hotpot with Lentils, Barley and Root Vegetables. And best of all five fabulous new desserts!
What would be your favourite Product?
Definitely the Hot Black Forest Sponge, which is a really rich chocolate sponge with cherry compote and a sumptuous chocolate sauce.
What about from main range?
My favourite is the herb crusted Salmon with tarragon sauce which is absolutely gorgeous! It’s a really good dish; you’ve got to try it! All the flavours really complement each other.
After spending all day creating fabulous new dishes for our customers, do you still enjoy cooking at home?
I absolutely love cooking but I do find it’s a rush to beat my husband into the kitchen! He’s not perfect
