Raspberry pancakes Be warned, they are very moreish!! Recipe (makes about a dozen) 270g plain flour 2 tsp baking powder 1 tsp salt 2 tbs caster sugar 260ml milk 2 eggs 4 tbs melted butter Method Sift the flour, sugar, salt and baking powder into a mixing bowl Mix the eggs and milk together. Stir the egg and milk mix into the dry ingredients, mix together until smooth. Lightly fold in the melted butter. Heat a non-stick frying pan until hot, add a little oil, then carefully place a spoonful of mix into the pan, if you have a large enough pan, do 2 or 3 at a time. When bubbles start to form on the top side, flip the panckes over for 30 seconds, remove from the pan and repeat. Raspberry Sauce Recipe 1 large punnet of raspberries (strawberries work just as well!) 60ml water 1/2 tsp vanilla essence 2 tbs caster sugar Method Remove 1/4 of the raspberries and put to one side. Place the rest into a small saucepan with the water and vanilla. Heat slowly until the raspberries are just soft, add the sugar, then blitz the raspberries with a hand blender until smooth.
